Yum! Baked stuffed shrimp are really EASY, and look elegant. Here's how we make them: Peel, devein, and butterfly some very large shrimps. Finely chop up some scallops (half a pound is good for 6 shrimps). Preheat the oven to 450 oF. Butter a baking dish. Lay the shrimp, cut side up, in the baking dish. Put chopped scallops on each shrimp. Melt some butter (1/2 a stick for 6 shrimp, but not critical). Mix in some breadcrumbs, some paprika, and some white wine. Pack this mixture (make it fairly stiff) over the shrimp. Sprinkle each shrimp with a few drops of water (to keep it moist). Bake for 15-20 minutes. You can add parmesan cheese to the butter and breadcrumb mixture if you like. The original of this recipe had Worcestshire sauce and crushed potato chips (yechh!) in there too. | |||||

Here is my "standard" bread crumb mixture for fish, or shrimp....it comes from the Gloucester House Ive made this for years and really dont use "exact" amounts so you may vary the following: 1 1/2 cups crushed milk crackers 1 tbs worcester sauce 1 teas frenchs mustard 1 tbs parmesian cheese 1/4 stick margerine salt & pepper to taste Mix all above ingrediants together....for stuffed mushrooms Ive added enough white wine to bind it better.....get shrimp ready and add teaspoon or whatever to each. cover with aluminum foil and bake at 350 for 20 minutes.... another variation is to place shrimp in four corners of baking dish and cut up all the rest and place in dish....cover all with crumb mixture and bake the same as above... This is an excellent recipe for baked stuffed shrimp!!! 2 1/2 rolls of Ritz Crackers 1 cup fresh parsley chopped 1 tablespoon minced garlic 3 tablespoons of lemon juice 1 cup butter 1 lb scallops chopped 3 tablespoons parmesean cheese 25 large deveined shrimp Melt butter, add garlic and sautee until soft. Add chopped scallops and cook for 1 minute. Add remaning ingredients (no the shrimp) Mix stuffing well. Stuff shrimp. Bake in a preheated 350 oven for 15-20 minutes. |
