| You can either buy it or make. When I make hot fudge, all I do
is melt 2 squares of unsweetnered chocolate in a double boiler.
When complete melted, add a can of CONDENSED milk(not evaporated)to
the chocolate and stir till smooth.
Most ice cream places will sell you their hot fudge sauce. If you
have a Steve's Ice Cream near you, they have wonderful hot fudge.

My hot fudge sauce is a genache with butter added.
Bring 8 ounces heavy cream with vanilla bean to a boil in a heavy sauce pan.
Remove from heat, remove bean, add 5 ounces chopped semi-sweet chocolate
(you may call it bitter-sweet) and stir to blend well. Beat in 3 tablespoons
chilled, unsalted butter, cut into small chunks, one chunk at a time.
Warmed up, this makes a nice fudge sauce...cooled, it becomes a solid
base buttercream and can be used for many other things.
Other flavors that can be added include a couple of tablespoons of your
favorite liquour...adults only.

| ANOTHER RECIPE:
1 cup granulated sugar
3-4 tsp (heaping) cocoa
1 cup milk
Mix sugar & cocoa together. Add milk & bring to a boil. When starts
boiling lower & cook 15 - 20 minutes, until thikened.

| Although there are many recipes for hot fudge sauce (available in
most basic cookbooks and also in desset cookbooks), my personal
favorite for purchasing is Bailey's. Bailey's is a long-standing
icecream shop with locations in Boston, Harvard Square and Chestnut
Hill (also in Belmont Center and may be other locations that I'm
not aware of). They make excellent hot fudge sauce which can be
purchased by pint, quart, etc. Locally, the Vermont Creamery in
Concord Ctr. and Steve's ICecream in Lexington Ctr. also sell very
good hot fudge sauce for ready-to-go. Making it from scratch can
be as simple as heating Hershey's syrup (not very sophisticated,
but it serves the purpose) or getting more complicated with unsweetened
Swiss chocolate, butter, sugar, etc. and doing it in a double boiler.
I'm being vague on the ingredients and amounts and process because
I don't have this information with me. If you want to pursue exact
recipes, let me know and I'll check my Larousse or Escoffier books.

| Does anyone have the Hershey cookbook? My father has been fantasizing about
this Chocoloate syrup (ice cream topping) his mother use to make when he
was little.
Well I've contacted Grandma - and she has searched everywhere for this
recipe, but can't find it. However, she thinks it was on the Hershey
box and has sent away for their cookbook. I'm sure this is not going to
arrive before Christmas and I wanted to make it for him as his Christmas
present.
Anyone out there able to assist me with this request?

| Here's one for Cocoa Syrup from the Hershey's Make It Chocolate book:
Cocoa Syrup
-----------
1 1/2 cups sugar
3/4 cup Hershey's Cocoa
Dash salt
1 cup hot water
2 teaspoons vanilla extract
In medium saucepan combine sugar, cocoa and salt.
Gradually add water, stirring to keep mixture
smooth. Cook over medium heat, stirring constantly
until mixture boils; boil and stir 3 minutes. Remove
from heat; add vanilla. Pour into heatproof container.
Cool; cover and refrigerate. Use as topping for ice cream
and desserts, or for chocolate flavored drinks.
About 2 cups syrup.

I believe .3 may have it. I know it was a simple chocolate (runny) type
sauce. It does not have any expensive ingredients (i.e. butter, cream)
so my guess it is the Chocolate Sauce. (but I'd like to have the Hot
Fudge recipe). If your Chocolate sauce matches .3 that MUST be it.
and if you have a minute could you type in the Hot Fudge for good measure?

Chocolate Sauce
6 Tbls water
6 Tbls sugar
1/4 cup butter or margarine
1 1/3 cups Hershey's Minichips Semisweet chocolate
Combine water, sugar and butter in a small saucepan; bring to a full
boil; stir in Minichips. Stir until chocolate has completely melted;
beat or whisk until smooth. Cool.
Hot Fudge Sauce
3/4 cup sugar
1/2 cup HERSHEY's Cocoa
2/3 cup evaporated milk
1/3 cup light corn syrup
1/3 cup butter or margarine
1 tsp vanilla
Combine sugar and Cocoa in medium; blend in evaporated milk and
corn syrup. Cook over low heat, stirring constantly, until mixture
boils; boil and stir 1 minute. Remove from heat; stir in butter
and vanilla. Serve warm.
About 2 cups sauce
