Chestnut Tart

From 'the Compleat Housewife', E. Smith, 1727.
Serves 6.
1 lb chestnuts, pureed, or 1/2 tin chestnut puree.
4 oz caster sugar
1/4 pint double cream
1 tbsp orange juice
1 tbsp sherry
2 egg yolks, well beaten
1/2 lb puff pastry or 3/4 lb short pastry
2 oz butter
Line a large flat tin with the pastry. Be careful that the sides adhere
to the tin so that you have a depth of 1/2" to 3/4" all round. Bake
blind for 10 mins at 400F, gas 6.
Meanwhile mix the chestnut puree with all the other ingredients except
the butter. Remove the case from the oven, allow to cool for 5 mins
and then pour in the chestnut mixture. Do not allow to overflow (if
any is left over, make up some small tartlets).
Dot all over with small pieces of butter. Bake at 300F, gas 2, for
about 20 mins, or until just firm. Sprinkle the top with caster
sugar while hot. Serve cold with whipped cream.

| aha! At last the English get questions on our weird ingredients
and measurements....
Caster sugar is a finer sugar than granulated sugar. Gran. is what
you put in your tea (or for the US coffee!) and caster is ground
down a bit finer. Icing sugar is VERY fine and using to mix with
water to make icing. (I think you say Frosting). I hope this helps.
By the way, I found it better not to dot with butter because it
looked a bit funny. But it is a very rich tart and quite delicious.

| Or in other word, caster sugar is super fine sugar or "bar sugar".
You can buy it in any supermarket. Domino makes it in a 16 oz. box.
It has a ffoil label with blue and varies other colors on it. Or
you can take regular suger and put it in a food processor for a
few seconds. The latter is a bit messy. Much easier to buy it.

bar sugar is the sugar used in bars(duh!)to make drinks with.

| While we're at it again about "English" vs "American" names for
things, "icing sugar" = "confectioner's sugar". I am no purist,
so I usually call it "powdered sugar".
