Another good variation of either recipie is to use pears instead of apples.
Sometimes I use a combination of both. Try it you'll love it!

| I always keep the ingredients for this quick & easy Apple Crisp
on hand for those unexpected visits. It's so easy I feel like
I'm cheating whenever I make it.
Ingredients
-----------
1 Can Apple Pie Filling
2 Teaspoons Cinnamon
1 Stick (1/4 lb.) Butter or Margarine
1 Box Jiffy Brand Yellow Cake Mix (Small Single Layer Box)
Mix the pie filling and cinnamon (adjust quantity of cinnamon
based on your personal taste) and spread in a pie plate.
Sprinkle box of cake mix (dry) over mixture. Slice butter in
pats and place all over the top. Bake until golden brown and
crispy on top.
Fantastic served hot with vanilla ice cream.
I've been planning to modify this and try it with various
pie fillings (cherry, blueberry, etc.) but haven't yet.
I suspect they'd be equally good.
Enjoy!

| Sorry 'bout that...I always use 350F. It takes quite a while to
cook (guestimate almost 1 hr). Be sure to let it get golden brown
or it could tend to be a bit soggy instead of chewy/crispy.

| Another variation on the first recipe is to use Quaker's 100% Natural
Cereal with the cinnamon and other spices and butter. It makes
a really crunchy crust! I always use more spices than most recipes
call for because I like the extra zing they add.

| A neighbor brought this apple crisp over last weekend, and was kind
enough to share the recipe. I've already made it twice in the last
week (it doesn't last very long in my house). Thought someone else
might enjoy it.
4 cups apples, pared and sliced
2 tbls lemon juice (optional)
1/2 stick butter
1/2 cup brown sugar
1/2 cup flour
1 tsp cinnamon
Preheat oven to 375.
Place the apples in a 9 inch pie plate or dish (I've used both a
9x9 dish and a 9x13 dish with more apples, but the same amount of
topping). Add lemon juice to apples and turn to coat.
Mix rest of ingredients, and work lightly with pastry blender or
fingertips til crumbly. Mix lightly so that it doesn't become oily.
Spread mixture over top of apples.
Bake at 375 for about 30 minutes or until apples are tender. Great
served warm with vanilla ice cream.

| They sell unbaked frozen apple crisp at Flat Hill Orchards in Lunenburg, Ma.
If you bake it first, then freeze, you'll probably end up with apple soggy
instead of apple crisp.
