    I was just looking through my recipe book and found an old recipe
    for Woopie Pies and thought that I would add it.  I love them, but
    havent't made them for a long time. 
    
    Woopie Pies:
    
    1/2 Cup Crisco          1C sugar
    2 egg yolks             1C milk
    2C flour                5Tbs cocoa
    1 tsp baking soda       1/2 tsp vanilla
    1/2 tsp salt
    
    Sift dry ingredients together.  Add rest of ingredients & mix until
    smooth.  Drop by the teaspoon on an ungreased cookie sheet.
    Bake for 10 min. at 375 until set but not crisp.  When cool put
    together sandwich style with filling in between.
    
    Filling:
    
    2 egg whites          2Cups confectionary sugar
    1 tsp vanilla         1/2 tsp salt
    
    Mix together until smooth.
    
    Tastes Great!

    2 cups flour             1/2 tsp. baking powder
    1 egg                    1 1/2 tsp baking soda
    1/2 tsp salt             1/2 cup cocoa
    1 cup sugar              1/2 cup shortening
    1 tsp vanilla            1 cup milk
    
    Mix well and drop by spoonful on greased cookie sheet.
    They spread!!!  Bake 7-8 minutes @375.  Fill with one
    of the following recipes.
    
    
    
    
                     Marshmallow Filling  (#1)
    1 2/3 cup confectioners sugar
      3/4 cup margarine, melted
      1/2 jar marshmallow
    
      Mix well.  Fill devil dogs.
    
    
                     Marshmallow Filling (#2)
    1 cup confectioners sugar
    1 cup marshmallow
    1/2 cup shortening
    1 tsp vanilla
    milk
    
       Cream all ingredients well, except milk using a mixer, beater,
    or by hand.  Add enough milk to make whipped filling of spreading
    consistency.  It will firm as it sets.

Here is an alternative filling which is simple to make.


	Cream filling

	1 cup heavy cream
	1/4 cup powdered sugar

	Whip.  Note:  Generously fills half of the moonpie recipe.  
But that was OK, since I didn't want to take a chance and I chose to 
refrigerate them.  When the first half were done, I made up the second 
half with additional filling.

HINTS:

.  Option, Add 1/2 tsp vanilla extract (or almond, etc)

.  For color, Add 2-3 drops food color

.  For chocolate, Add 2-3 tablespoons cocoa

.  For mocha, Add 2-3 tablespoons cocoa + 2-3 teaspoons instant coffee

.  For !, reduce p. sugar to 2 TAB + 2-3 TAB favorite liqueur
