| I don't know if this is authentic Hawaiian but it's delicious.
Waikiki Meatballs
Mix thoroughly:
1 1/2 lbs ground beef 1 1/2 tsp salt
1/3 cup minced onion 1/4 tsp ginger
2/3 cup cracker crumbs 1/4 cup water
1 egg
Shape mixture into balls. Melt 1 tablespoon shortening in large
skillet. Brown and cook meatballs. Remove from skillet, keep warm.
Leave fat in skillet.
Mix in seperate bowl and stir until smooth:
2 tbsp. cornstarch
1/2 cup brown sugar
Pineapple syrup (from 13 1/2 oz can of pineapple to be used later)
1/3 cup vinegar
1 tbsp soy sauce
Pour into skillet. Cook over medium heat stirring constantly until
thick and boiling. Boil and stir 1 minute.
Add to skillet:
Meatballs
13 1/2 oz can pineapple tidbits
1/3 cup chopped green peppers
Heat through. Serve on brown rice. Serves 4.

| A question:
Because of the large variety of ethnic groups in Hawaii today,
"Hawaiian food" has become a blend of Japanese, Chinese, Portugese,
Philipino, Caucasian, Korean, etc. Is this what you're looking
for, or do you want some true Hawaiian recipes (Eg. poi, lomi salmon,
lau lau, etc)?

| At the top of the list, try Baked Ham Hawaiian, a standard baked ham with
a pineapple glaze. Sure it's not authentic, but it will do, unless you want
to dig a pit, and wrap a pig in leaves and roast it.
Another thing that was omnipresent when I was in Hawaii was fruit salad,
featuring ... Pineapple! Any combination of tropical fruits would do, for
example, mango, papaya, guava, passion fruit, etc.
Of course when I was there, EVERYTHING came with pineapple, except the poi.
If you can't find taro to make authentic poi, try mixing flour and water with
2 drops of every available food coloring to give a sort of rainbow brown effect.

| Hi,
I don't know if this is Hawaiian or Californian, but a chicken and
papaya salad is always good and tropical. Just cube poached or grilled
chicken breast toss in a mixed green salad add cubed papaya, pinapple,
grapes maybe and toss with a papaya-seed dressing or a honey-dijon(sp?)
mustard dressing.
There is a recipe for a papaya-seed dressing in the August issue of
Gourmet, the sugar and spice section, or the one where people submit
their own recipes.
If you want to make a dessert try a tapioca and coconut pudding, my
personal favorite. Or a mango souffle, passion-fruit souffle, or a
tropical fruit flan.

Hawaiian Chicken

I don't know how many people you are feeding but as a basic,
cut up six to seven chicken breast into good portion squares.
And take the skin off and fry in a skillet don't add any grease
let the chicken cook in its own fat. Cook till it brown, if you
use a electric skillet turn the temp. to 400 degrees. Brown a
taste then add a cut up whole onion, bell pepper,and carrots.
Then add whole cherries and sliced pineapple. This is quick and
simple then the final touch. Mix the pineapple juice with a cup
of pancake syrup and mix then add the the skillet. and let it
simmer. You could also add instead of syrup buy some chun-king
sweet and sour sauce its the same just reddish in color.

| I made this hawaiian truffle...
I used the premise of the heathbar truffle but changed the
ingredients...
1 white cake (baked)
1 can crushed pineapple (drained)
cool whip
shredded coconut
rum
chopped nuts
cut cake into pieces and take a huge truffle bowl (or just a
bowl) and begin layering each of the ingredients...sprinkling
liberablly or not so liberally with rum. when finished top
with cool whip, nuts, coconuts and some pineapple .

| Have the favors be jordan almonds tied to a lei, (they are
plastic, and inexpensive. You can use netting and matching
ribbons to tie them on) so that everyone can wear it during
the shower. They are available at many of the party goods
stores, and come in terrific colors.
You could do a Luau i.e. serve buffet style a Roast Pork all
decorated up on a fancy platter with flowers & green leaves
& fruits, Decorate the table with fancy carved watermelon and
cantalopes, and don't forget the coconuts! :-) (skip the poi,
tho', yuck! :-)) You can get paper streamers that are flower
garlands, and maybe even rent a waterfall for a centerpiece
that can have a tropical fruit punch/wine cooler in it with
plastic flowers floating around. (Most party places had these
for rent when I did a shower for a friend).
Get some Don Ho tapes ("Tiny Bubbles......" :-)) for backround
music. Ask all attending to wrap the gifts in a Hawaiian theme
to add to the color and excitement.....

| alos...I make thewse for my luaus...
remember the flowers kids make when they were little...out of
tissues!
Well I would buy the big sheets of wrapping tissue in bright
colors and make large ones...like the ones you get at amusement
parks and put them in a large vase with long stems! if you
want attach jordan almonds to the stems or in the middle to
look like the seeds!

| serve tropical fruit kabobs as snacks:
on bamboo skewers, layer pineapple chunks, papaya chunks,
whole strawberries, peeled kiwi fruit
serve these with coconut cake and a nice fruit punch. A waterfall punch
bowl is perfect (you can rent one). If you don't want to bother with a
cake, call a local bakery and get them to bake up some nice macaroons for
you.
Use tropical flowers (silk is fine) as the centerpiece, and decorate with
lots of bright colors...perhaps a few yards of a traditional tropical print
fabric as a table cloth on which to place the presents?

| If your budget will run to flowers, most florists can readily
obtain beautiful stalks of pink or white ginger, huge ti leaves,
red, pink or white anthurium, birds of paradise, oncidium and
other orchids. My sister, a florist on the Cape, did a wedding
reception in a Hawaiian theme and the arrangements were quite
unbelievably gorgeous. An added benefit, most of those
flowers are very long-lived - like two weeks or more. It
doesn't take many flowers either, because they are so striking.
Have the florist use lots of tropical leaves (which come in green,
reddish green, yellowish green, etc.) and accent the arrangement(s)
with a stalk or two of flowers.

Watermelon (cut out beautifully)
Tropical Drinks
She suggests decorating with Houseplants, a couple of Orchids dime-store
leis, grass-skirts, Hawaiian music perhaps even a hula dancer. To serve
the drinks you might use coconuts halved with a saw, or heavy balloon
goblets. Serve as buffet style.
Hawaiian cuisine is based with the flavors of the East (ginger, curry,
soy) and the tropics (lime, coconut, pineapple). Serve food on lotus
plates (local flea markets/yard sales/antique places) and big clam
shells (can be found in party stores). Use melon colored napkins.
Her party was held inside (in November) but if held outside perhaps
Japanese lanterns - or little white lights (from the Christmas tree
attached to your shrubbery) would be pretty.
She attempted to create a feeling of carefree, sunstruck, island fun.

| I make my rumakis a little differently from .14's way ...
Instead of a scallop, I take a mushroom crown (canned) and half
of a water chestnut (canned), put them together (flat sides
together), and wrap with a half-strip of bacon and broil until done.
They're usually gobbled up long before they have a chance to cool
down. :-)

| My recipe book is in the car. Going out at lunchtime and will post
after I get back (this afternoon).
Her recipe for Rumaki is Chicken Livers wrapped in bacon - in a
Japanese/oriental sauce. Out of this world - even liver haters
have eaten this and become fans of the stuff.

Other variations for Rumaki include pineapple or date in place of
the liver. These are both excellent and would seem appropriate
in this setting.
