422.0. "Dutch Babies - a brunch food" by PARSEC::PESENTI () Wed Nov 19 1986 10:04
Dutch Babies are very similar to Yorkshire Pudding, but
require no roast beef, and make a great brunch food. The
recipe is easy; the ingredients are simple. Pay more
attention to the order in which things are done.
First, you need a good "Dutch Baby Pan." My favorite is a
#10 Cast Iron skillet (chicken fryer), which is about 12" in
diam. and 3-4" deep. I have used a smaller skillet, and a
dutch oven. You must be able to put them in the oven, so
wooden and non-bakelite plastic handles are out.
Second you need a blender.
HOW TO:
1. Put the pan on the middle rack of your oven, and then turn
the oven on to 400�F.
2. When the oven is up to temperature, put 1 stick of margerine
(or butter, but it tends to burn easier) into the pan, and
close the oven door.
3. Put:
1 cu milk
1 cu white flour
4 large eggs
into the blender, and leave the blender on high.
4. When the stick of margerine is fully melted, stop the
blender and pour the contents into the pan.
5. Bake for 20-30 minutes until golden brown. (It will puff up
and then fall in the middle, leaving a crust around the
edge.
6. Carefully remove the pan to a trivet, and run a knife
around the edge of the dutch baby. As best you can, slip
the dutch baby out onto a cutting board. And pour remaining
fat onto the top. Put the pan back into the oven and go to
#2 if making more.
7. To serve, cut into 6-8 wedges and cover with your favorite
toppings.
For toppings, I usually put out a variety, and let folks
help themselves. They usually include:
Warm Maple Syrup w/ melted butter
Sour cream & Strawberries
Sauteed spiced bananas & cahsews
Sauteed spiced apples, walnuts, & raisins

| My Pepe (grandfather) was a chef and he used to make the same thing
for Sunday morning brunch, only he called it a Dutch pancake. He
used to spread it with jam or jelly and roll it, then sprinkle the
whole thing lightly with powdered sugar.
Mmmmmmm...

I can verify that these things are great! I brought the recipe home
one day and my roommate and I cannot get enough of them.
One good topping to try in powdered sugar and chocolate sprinkles.
It's alot of calories but what the heck you only live once.
