    I am a mussel addict.  I eat mussels steamed in water; beer; wine,
    with dill sauce, garlic sauce, mustard sauce, whatever-is-in-the-fridge
    sauce.
    
    But, what I NEED to find out is:  how do you make SMOKED mussels.
    I had some smoke mussels in a restaurant a few weeks ago and have
    not been able to find out how to make them myself.  It was a
    Scandinavian meal and they seemed to smoke all of their fish (I've
    never had lox without bagels before.  The smoked scallops were
    *surprizingly* good!)  Are there any Scandinavians out there who know
    how to smoke fish at home (I don't want to buy the seriously-carcinogenic
    'liquid smoke' stuff you can buy at the grocery stores.

    	Eileen i'm not scandinavian but i do know how to smoke meat
    and fish.  the best thing for you to do is aquire a good book on
    preserving meat and fish.  Most good bookstores have them in either
    the cooking section or in the outdoorsie sections.  if you have
    problems finding a good book let me know and i will copy the necessary
    pages for you.  now for the smoking part there are numerous smokers
    out on the market which you can buy.  i recommend the LITTLE CHIEF
    SMOKER.  i have friends that use it and love it.  i have made my
    own though.  if you want the name of the book i have i'll put it
    in the notes file.  DON'T FORGET SMOKING CAUSES CANCER, or at least
    that what some people think.

    Thanks for the cookbook title.  I'll look for it this weekend.
    
    Re: the cancer.  I know that smoking things is carcinogenic but
    that liquid smoke stuff could probably kill in a few bites!
    Everything worth doing seems to give you cancer - but there is a
    quality of life issue here.  I'm going to die anyway and those
    smoked mussels will make the life I live much happier!

    THERE ARE SMOKED MUSSELS AVAILABLE IN THE SUPERMARKET, NEXT TO THE
    TUNA FISH.  THEY REALLY ARE QUITE GOOD. SINCE THEY COME PACKED IN
    OIL, I RINSE THEM UNDER RUNNING WATER FIRST, AND DRAIN WELL.  A
    DELICIOUS (THOUGH FATTENING) DIP FOR THESE IS EXTREMELY SIMPLE:
    MIX CURRY POWDER TO TASTE IN A GOOD MAYO .  I'M NOT A CURRY 
    AFICIONADO, BUT THIS WAY IT'S DELICIOSO!!
    
    HOPE YOU LIKE IT!! SMOKED OYSTERS AND BABY CLAMS (ALSO CANNED) ARE
    GREAT THIS WAY.

    Tried this last night...
    
    Soak mesquite wood in water for about 30 minutes.  When the coals
    are ready, add wood chips.
    
    Place mussels in a shallow baking dish and add enough beer to cover
    the bottom (drink the rest).  Place on the grill and close the cover.
    Cook until the shells open (approx. 10 minutes).
    
    Enjoy!!

    liquid smoke works for me.  do not, repeat DO NOT use to much. most
    recipes i've seen call for to much. and its not any worse for ya.
