| APPLE (OR PEACH OR PLUM) PANCAKE
Melt 2 tbs. of butter in cast iron skillet.
Heat oven to about 400.
Mix: 1/2 C flour, 1/2 C milk, 2 eggs, a little salt.
pour into skillet and then add a single layer of apple slices.
Sprinkle with a little sugar and spices of choice. Bake for about
10-20 mintes until puffy and golden. Slice like a pizza. (I'm
a little unsure about the timing - and my oven is so fast I have
to really watch things anyway.)

| SWEET APPLE QUICK BREAD
2.C. All Purpose Flour
1 C Sugar
1 Tsp. Baking Soda
1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1 C. (2 Medium) Peeled, finely chopped apples
1/2 C. Butter or Margarine (soft)
1/2 C. Milk
2 Tbs. Grated Orange Peel
1 Tbs. Corn syrup
2 Eggs
1/2 C. Chopped Nuts
Preheat oven to 350. Grease bottom of 9x5 or 8x4 loaf pan.
In large bowl, blend all ingredients except nuts. Beat
3 min. at med speed. Stir in nuts. Pour into prepared pan.
Bake 50 to 60 min, or until toothpick inserted comes out clean.
Remove from pan to cool. makes one loaf

| Here's one of my favorite apple recipes. I got it from my
mother-in-law.
APPLE CAKE
Preheat oven 350. grease 8 or 9 inch pie plate.
Mix in order given:
2 tablespoons shortening
1 cup sugar
1 egg
1 teaspoon vanilla
3 cups peeled diced apples
sift together:
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon baking soda
1 cup flour
Mix together with apple mixture and put in pie plate. Bake for
40 minutes. When cooked,sprinkle with powdered sugar. Serve hot
or cold.
For variety add 1/2 cup raisins or 1/2 cup walnuts or both before
baking.

| My mother always baked an applesauce type of thing on cold days:
heat oven to 350 degrees
pare, core, and chop approx. 6 cups apples
mix apples, 3 - 4 tablespoons lemon juice, 1 to 2 cups dark brown sugar,
3 to 6 teaspoons cinnamon, 2 - 3 teaspoon allspice
The sugar and spices are primarily to to your taste and the
sweetness of your apples.
put into a buttered cassarole or pan, dot liberally with butter,
cover and bake for 2 hours, remove cover and bake for approx.
another hour until thick and the house smells heavenly....
This is perfect over pancakes, waffles, ice cream,.....you name it.
Oh how I miss the apples I used to get in Mass. !!!!

| This is from either the Globe or the Herald.
4 apples
2-1/2 C. grated cheddar cheese
3 T mayo
1 T dijon mustard
1 tsp. nutmeg
16 slices bread
butter or margarine
Peel, core, and finely chop the apples.
In a bowl, combine the apples, cheese, mayo, mustard, and nutmeg.
Mix well.
Generously butter one side of each bread slice. Heap apple mixture
on the unbuttered side of half of the bread. Top each with a
slice of bread, buttered side up.
Grill over medium-low heat until filling is melted and the bread
is golden.

| APPLE CAKE
(10 to 12 servings)
2 cups sugar
3/4 cup vegetable oil
2 eggs
1 tsp vanilla
1/2 cup chopped walnuts
2 cups sifted all-purpose flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt (which I never add)
4 to 5 medium-size tart apples, peeled, cored, diced (about 4 cups)
Preheat oven to 350F. Grease 12-cup bundt pan and dust with flour.
Combine sugar. oil, eggs and vanilla in large bowl of electric mixer
and blend well. Stir in walnuts. Sift flour, cinnamon, baking
soda and salt into large mixing bowl. Add to sugar mixer and blend
thoroughly (this part gets very thick and heavy and a little hard
on the arms). Stir in diced apple. Transfer batter to prepared
pan. Bake until tester comes out clean, 1 hour. Let cake cool
10 minutes in pan on wire rack. Turn out onto rack.
This cake is very moist and heavy so make sure the pan is well greased
(I've ended up with a large hunk of cake sticking to the pan on
one or two occasions). It's wonderful hot with vanilla ice cream.
If I'm making it for other people sometimes I make a kahlua glaze
for it or I sprinkle it with powdered sugar. If you want to sprinkle
on the powdered sugar, do it right before serving. It's so moist
it tends to absorb the sugar if it's not eaten right away. I do
all the apple dicing and walnut chopping with the food processor
but I always stir the flour mixture into the sugar mixture by hand
(probably related to the belief that I use up as many calories mixing
it as I gain by eating it - I know, but we all have our private
fantasies).

I made this Apple Cake Saturday and it was wonderful.. the smell,
the taste, the texture... ummmmmm..
I did make two little changes, I used whole wheat pastry flour (whole
wheat flour ground very fine and light) and I halved the sugar and
used sweet dessert apples to make up the difference.
It was a hit with all of us! Many thanks!

APPLE RAISIN BARS
-----------------
Crust:
1 1/2 cups old fashioned or quick oats, uncooked
3/4 cup flour
1/2 cup packed brown sugar
1/4 cup granulated sugar
3/4 cup margarine or butter
Topping:
2 8-oz. pkgs. cream cheese, softened
2 eggs
1 cup chopped apple
1/3 cup raisins
1 TBS granulated sugar
1/2 tsp. cinnamon
Combine oats, flour and sugars; cut in margarine until mixture
resembles coarse crumbs. Reserve 1 cup oat mixture; press remaining
mixture onto bottom of greased 13 x 9" baking pan. Bake at 350
degrees for 15 minutes.
Combine cream cheese and eggs, mixing until well blended. Pour
over crust. Top with remaining ingredients; sprinkle with reserved
oat mixture. Bake at 350 degrees for 25 minutes. Cool; cut into
bars.

| This probably isn't the place to enter this, but I had no idea where to
ask. I figured where it was an apple topic it would be alright.
Does anyone know where I can get Baldwin apples? I live in Clinton and
work in Acton, so anywhere in the vicinity would be fine. My
grandmother always used Baldwin apples for her apple pies and they were
simply scrumptious. Any help would be greatly appreciated.

| If you're going west on route 111 there's a farm stand about a mile
after you go over route 495. I believe it's in Boxboro on the way to
Harvard. They have lots of different apples. Wouldn't surprise me if
they had Baldwins.

| I'd like a recipe for apple/fig/lemon/whatever squares, the kind you
can get at a bakery. They have flakey crusts for both the top
and the bottom; the top is a golden brown. There's filling in
between, I would guess about 1/4 to 1/2 inch thick. The whole
square is about 3/4 to 1 inch thick and they usually cut them
around 4" x 3". The only fruit square recipes I've seen have
either crumb or shortbread/cookie type crusts. The crust might
be a type of pie crust, but it isn't like my usual one. I don't
think it's phyllo, either...but maybe someone knows for sure?

The ones I'm familiar with are made with the sheets of phylo dough...strudel
sheets is what they are called. You can generally buy them in the freezer
section of the market. If not made using the phylo sheets, then they must
be made from puff pastry. If so, then you can get the puff pastry, frozen
in sheets, under the Pepperidge Farm label. I've made this stuff from
scratch, and believe me, you don't want to bother -- especially since it
is great from the box. Just follow the directions on the box for defrosting
and handling the dough. cut to size, add your filling, and bake. Simply
delicious results are guarenteed.

| This recipe is from my sister, Carol, who brings it to family
gatherings. We tell ourselves it's a healthy dessert. :')
Cheezie Dapper Apple Squares
1 1/2 cups flour
1 1/2 cups graham cracker crumbs
1 cup firmly packed brown sugar
1/2 teaspoon baking soda
3/4 cup melted margarine
6 slices cheddar or american cheese
4 medium, sliced apples
1/2 cup sugar
1/2 cup chopped walnuts
Preheat over to 350 degrees. Combine first 5 ingredients til crumbly.
Save 1/2 cup of mixture for topping. Pat the rest firmly in 9 X 13 inch
pan. Put 6 slices of cheese on top of mixture, spreading them out. Mix
the apple slices with the 1/2 cup of sugar, then layer them over the
cheese. Sprinkle 1/2 cup left-over crust mixture on top with walnuts.
Bake 35-40 minutes til golden.

| These "Apple Pie Bars" are excellent!
This recipe is from the Land O' Lakes Cookie Collection. The original
recipe called for 8-10 apples in a 10 x 15 x 1 -inch pan. I have a
9 x 13 x 3/4-inch pan, and I ended up using about 4 apples. I also
ended up using only about 1/2 the sugar mixture on top of the apples,
since I was using less apple. The quantities below reflect my
modifications.
Apple Pie Bars
Crust:
Milk
1 egg yolk, reserve egg white
2 1/2 cups all-purpose flour
1 tsp salt
1 cup butter, softened
Filling:
1 cup crushed corn flake cereal
4 medium apples, peeled, cored, and sliched 1/4-inch
1/2 cup granulated sugar
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1 reserved egg white
2 T granulated sugar
1/2 tsp ground cinnamon
Glaze:
1 cup powdered sugar
1 to 2 T milk
1/2 tsp vanilla)
Heat oven to 350 degrees. For crust, add enough milk to egg yolk
to measure 2/3 cup; set aside. In medium bowl, combine flour and
salt. Cut in butter until crumbly. With fork, stir in milk
mixture until dough forms a ball; divide into halves. Roll out
1/2 of the dough, on lightly floured surface, into a 9 x 13 inch
rectangle. Place on bottom of ungreased 9 x 13 inch jelly roll
pan.
For filling, sprinkle cereal over top; layer apples over ceral.
In a small bowl, combine 1 cup granulated sugar, 1 1/2 tsp
cinnamon and nutmeg. Sprinkle over apples. Roll remaining 1/2
of dough into a 9 1/2 x 13 1/2 inch rectangle; place over apples.
In small bowl, stir together 2 T granulated sugar and 1/2 tsp
cinnamon; sprinkle over crust. Bake for 45 to 60 minutes, or
until lightly browned.
For glaze, in small bowl, stir together all glaze ingredients.
Drizzle over warm bars. Cut into bars.
Makes about 3 dozen bars.

| Fresh Apple Cake with Caramel Frosting
Makes 1 13"x9" cake and 1 cup frosting
Note: The cake batter does not require added liquid. The eggs and
the apples are the only "wet" ingredients. The juice from
the apples that's exuded by baking adds the moisture to the cake. I am
just telling you this now so you don't get to the middle of making the
cake and ask, "What? No milk? Must be a mistake." OK?
Recipe from Bakery Lane Soup Bowl Cookbook. Bakery Lane Soup Bowl is
(or was) a restaurant in Middlebury, Vermont.
Cake:
2-1/3 c. flour 4 c. peeled, chopped apples
2 c. sugar 1/2 c. soft shortening
2 tsp. baking soda 1/2 c. chopped walnuts
1 tsp. cinnamon 2 eggs, beaten
1/4 tsp. cloves
1/4 tsp. nutmeg
Combine flour, sugar, soda, salt, and spices in large mixing bowl.
Blend well.
Add apples, shortening, nuts, and eggs. Beat at medium speed until
well blended.
*NOTE: I chose to cut the shortening into the flour
and THEN add the apples, beaten eggs, and nuts. Came out good.**
Pour into a greased and floured 9x13" pan. Bake in pre-heated 325
degrees (F) oven for 45 minutes, or until cake springs back when
touched. Cool on wire rack. Frost in pan w. caramel frosting.
Caramel Frosting
1/3 c. butter 1-1/2 c. sifted confectioner's sugar
1/2 c. firmly-packed 1/4 tsp. vanilla
brown sugar
Dash of salt
3 Tb. milk
Melt butter in small saucepan. Add brown sugar and a dash of salt.
Stir over medium heat until sugar melts. Add milk and bring to a boil.
Pour into mixing bowl and cool 10 minutes. Add confectioner's sugar
and vanilla. Beat to spreading consistency, adding additional
confectioner's sugar, if necessary. Frost cake.

In a bowl combine brown sugar, 2 tablespoons of flour, butter, and cinnamon.
In another bowl blend butter with sugar. Beat in egg and milk gradually.
Add flour, baking powder, and salt. Beat vigorously. Blend egg mixture and
flour mixture. Pour 1/2 batten into a greased baking pan. Layer with 1/2
apple slices. Sprinkle evenly with 1/2 brown sugar mixture. Top with
remaining butter, apples, and brown sugar.
Bake at 325�F for 50 to 60 minutes. Remove pan to a rack.
(Serves 6)

| I am looking for an apple recipe - don't have the name, but can
describe it. This dish was prepared in a baking pan (square) and
had cored and peeled apple halves sitting on a vanilla custard base.
Sprinkled with cinnamon and the whole thing had a crust on top.
Had this at a work function years ago and have never been able to even
find a recipe close to it.
One of the places I contracted had a food "event" once a month. We
would pull a food out of a hat (not literally!), such as apples, and
everyone in the department would have to bring in an dish made with
apples. We had a sign up sheet and no one could bring an item already
listed! Wtih about 20 of us, it was always an adventure. We would
reserve a conference room and have a terrific staff lunch.

| What you describe sounds like a rice-custard pudding that my mother
used to make. She always sliced apples over the top and sprinkled
cinnamon and nutmeg over that. I will try to find the recipe for you.
