| No, not really. It helps if you don't use the skins when you
make the broth, and sometimes it helps to put the broth in a
gravy strainer and pour off the broth part, but what I usually
do is put in all chicken refuse and refrigerate the broth.
I also make beef broth from the bones in the various beef
cuts we eat. Since we don't have steak or other beef cuts
with bones all *that* often, I store the bones in a zip-lock
bag in the freezer until I have enough to make broth. Then,
on a nice cool evening, I make up the broth, cool it, and
freeze it in ice cube trays. When it's frozen, I dump it
into a big zip-lock bag and date it. It's easy to take out
just what I need that way, and I'm not tempted to go for the
instant salt-broth stuff when I'm making soups or gravy.

| RE: CHICKEN FAT
Use fresh iceberg lettuce in large leaves -- just let it sit on
top of chicken broth for a couple of minutes and it will absorb
the fat. Repeat if necessary.

| If your in a hurry, you can spoon off almost all the fat with a
tablespoon....Ive done this often....and surprisingly, you can get
almost all of it

| My wife has a gadget called a grease mop. It is simialr to a
basting brush, but instead of bristles it has a nylon mop head.
The fine nylon threads absorb the grease. You dip it around the
top of the soup till it is full of grease, then rinse it out in
hot water. Repeat until the grease is gone. She got ours at a
Crate & Barrel or something like that.

Many recipes call for a small amount of chicken stock/broth.
I would like to know if it is possible to either freeze or
refrigerate the unused portion once a can has been opened.
How long would it keep?
I do make my own sometimes and freeze it but this is not
always possible.

| Yes, you can freeze canned chicken broth...a good way to do it is
freeze it in ice cube trays, that way you can defrost a small amount
when needed!
