| Peel - VERY CAREFULLY - chop up in salads where you want a crunchy
texture.
Also good when marinated in vinegarette.

They are pretty good, sort of reminiscent of cranberry muffins.

| They make WONDERFUL jelly. Don't add water if you can
help it...it changes the color from ruby to a sort of
non-descript peach.

| The Shaw's in Stratham and Nashua, NH have it from time to time.
I think I saw it in the Purity Supreme in Woburn once, too.

| Thanks for all the cactus pointers. I wound up buying a couple cans
from the owner of Casa Romero. I don't believe he was terribly
enthusiastic about it, although he was pleasant to deal with. I shall
have to try some of the places suggested in the previous replies.

CACTUS MEXICANO

2 lbs. nopales (cactus pads)
1 large tomato, diced
1 small onion, chopped
1 clove garlic, minced
1/2 cup chopped fresh cilantro
1 1/2 tsp. salt
1/2 tsp. pepper
Carefully remove thorns and eyes from nopales with a sharp knife;
trim outer edges, and cut nopales into 1/2-inch pieces. Place in
a saucepan with water to cover; bring to a boil. Reduce heat, and
simmer 30 to 40 minutes or until tender. Drain and let cool.
Combine nopales, tomato, and remaining ingredients, tossing gently
to combine. Yield: 6 servings
