| Frozen Pineapple Cream
This dessert taste very much like ice cream but has so many less
calories. This is what I serve to my friends daughter who is hyperactive and
can't have sugar, she loves it!
It will keep in the freezer for two days or so. Transfer it to the
fridge 2 hours before serving, if it's still firm let it stand at room
temperature until softened.
1 can (20 oz) pineapple chuncks packed in unsweetened juice,
including all but 1/4 cup of juice from can
2 teaspoons fresh lemon juice
3/4 cup evaporated skim milk (1/4 percent milk fat)
4 dashes ground ginger
1 teasp sweet sherry
1) Combine all ingredients in blender. Blend on high speed for one minute.
2) Turn into freezer tray that has been rinsed in cold water. Place tray
directly onto metal in freezer and freeze until almost firm (about 2 hours).
3) beat with electric mixer in tray until light. Or turn into food processor
and process on/off three times with metal blade. Pour back into freezer tray.
Return into freezer. This time do not place in direct contact with metal.
Freeze for 1 1/2 hours. Finished dessert should be creamy and semisoft.
Yields 6 servings
Variation: Omit sherry from basic recepie. Spoon into dessert dishes and pour
over dessert 1 tablespoon per serving of liquor such as kirsch, Grand Marnier,
or cognac.
59 Calories per serving. No appreciable difference with liquor topping instead
of sherry.
