real simple one here... (sorta diety as well)

   ingredients: boneless chicken breast
   			Spaghetti Sauce
   			Mozzarella
                        bread crumps
   			1 egg or two whites
   			2 tbsp salad oil
   			1/3 cup seasoned dry breadcrumbs
   			1/2 tsp salt
   			dash pepper

   	blend egg and oil

dip chicken into egg and coat lightly with breadcrumbs

place chicken on cookie sheet (sprayed with pam)

bake 8 - 10 mins @450 till golden and crisp (depending on size of
   	  do not turn chicken breast)

transfer to oven proof platter, pour sause over breasts, layer
   	the cheese on the chicken.

bake it again till the cheese is done

   for the harder one...

coat chicken with flour, dip into mixture of (egg, milk, salt, pepper)
and then into the bread crumbs.

fry the breaded chicken in oil (deep or pan fry - enough oil to cover
the chicken easily) till golden brown, remove and drain breasts.

place the chicken into a platter with a tad of sauce underneath and cover
with sauce and cheese. bake till done @400+- (about 25 minutes)

I normally get some Shake-n-Bake italian style, cook up the chicken,
then transfer them to a deep pan, cover them with sauce and sliced
Mozzarella, then bake until the cheese is all gooey.. Simple, and
only takes a half hour to make.

dinner for your new girlfriend here goes.

    Go to Star Market

        1 24 oz. Prego Mushroom Sauce $1.59

Put Cutlets in pie dish (?), cover w/ Sauce then Mozz cheese
    Bake for about 20 minutes

Cook spaghetti about ten minutes before she's supposed to arrive-
don't worry women are always on time!!%#!

Put the sauce in a bowl and microwave it 5 mins before she gets
    there.

Slice the Italian bread in half, butter it and toss in some garlic
salt or something like that. Bake it for a couple of minutes.

Yes, this is the ticket. Everybody loves Chicken Parmesan with pasta.
It looks like it takes a long time to prepare but it doesn't and
it's nutritious. Pasta has good carbs, chicken is low fat (rel.
to beef) and has good protein. Good stuff.

Break 2 eggs and beat slightly - dip chicken in egg, then in
    cheese/bread crumb mixture!

Bake at 350 degrees for 1/2 hour (longer w/ bones)

Try using a drench of butter milk and double-coat the chicken with it
and the cheese/bread crumb mixture. GREAT!

    CHICKEN PARMESAN

Take three whole breasts of chicken, boneless and skinned, and cut into
large pieces. Meanwhile, crush a bag of potato chips (plain) so that
you have about two cups (I use waxed paper under a rolling pin). Grate
a block of fresh parmesan cheese (those triangles you can get anywhere)
and add it to the potato chips. Add a tablespoon of dried parsley, a
teasoon of dried basil, and as much garlic powder as you like, and mix
    it up.

Melt a stick and a half of butter; dip the chicken pieces in the butter
and then into the chip/cheese mixture, and put the pieces in a baking
dish. Depending on how big those breasts were, you might need a large
baking pan or two smaller ones; don't crowd the chicken. It should be
    one layer only.

Bake at 350 for about 45 minutes; your family will be scraping the
bottom of the baking dish to eat the crunchies after the chicken has
disappeared! I serve rice and a veggie with this.

Adrienne Barbeau (Maude's daughter) gave this recipe to a friend of
mine who lives in California; she's a great cook (Adrienne) and served
this one night for my friend, who passed it on to me. It's delicious!
