Normally when I think about the microwave oven, it's for defrosting/melting and
the like - I don't COOK much in it. But I tried the recipe below, "English
Muffin Bread". It's pretty good!
Ingred:
cornmeal
2 C milk
1/2 C water
5 C All purpose flour
2 envelopes dry yeast
1 T sugar
2 t salt
1/4 t baking soda
(Note: I omitted the salt, and the bread didn't taste salty enough for english
muffins)
Grease two 8 1/2 x 4 1/2 inch glass or ceramic loaf pans. Sprinkle w/cornmeal,
shake out excess. Nuke milk + water to ~125 degrees; 3-4 minutes. Mix 3 C flour
, yeast, sugar, salt, baking soda in large bowl. Add warm milk mixture and beat
well. Blend in remaining flour and stir till dough is stiff. Divide dough into
the two pans. Cover/rise in warm, draft free area ~45 minutes.
Cook one at a time on High setting for 6 to 6.5 minutes (turn once if your nuke
doesn't have a rotating platter). Let stand 5 minutes before removing from pan.
Slice loaves thingly and toast before serving.
It's very strange to watch bread nuke...
