My Mother's Raisin Pie This is what I grew up with and I love it! Filling for a 9" pie 2 Cups Raisins 1 Tbs Butter 2 1/2 Cups water 1/4 Tsp Cinnamon 3/4 Cup Brown Sugar 2 1/2 Tbs Tapioca Boil for 10 minutes or until thick. Enjoy! | |||||

The raisin pies here in Fresno,CA, are quite a big deal when raisin "season" rolls around (just last week or so). The pies are kind of a rum-raisin cream filling topped with meringue. I don't have the recipe, but you could approximate it fairly well by using a coconut cream pie recipe with raisins and rum flavoring instead of coconut. Best, Michelle |
