| I don't know if this is what you have in mind but here goes.
How about an ice cream pie. Get chocolate icebox cookies and
crush into crumbs. Mix with some butter just so the crumbs stick
together. Press this into a pie plate.
Get ice cream of your choice, possibly something like Ben and Jerry's
or Steve's. Soften just enough so you can get it to smooth out
in the cookie crush then refreeze. Then use your imagination for
the rest. Suggestions, if using coffee ice cream how about hot
fudge and nuts (great mud pie).
Also depending on the ice cream you could hide some sort of garnish
in the middle, in other words, put in half the ice cream then the
garnish and then another layer of ice cream.
For the coffee ice cream lover, i might suggest using Ben and Jerry's
coffee heathbar crunch ice cream. The stuff is habit forming.

| Here is a recipe for mocha ice cream pie:
1 pkg. instant vanilla pudding mix
1 pkg. instant chocolate pudding mix
1 1/2 c. milk
1 pt. vanilla ice cream, softened
1 tsp. instant coffee
Blend pudding mixes and milk for 1 minute with mixer. Mix in ice
cream and coffee. Pour into crumb crust pie shell (I'd suggest
a chocolate cookie crumb) and chill. Serve with whipped cream and
grated bitter chocolate.

I have a simple and excellent recipe for an ice cream cake ...
(I am new to this notes file, but maybe you could use this
recipe for next years birthday)
(Chocolate - Mocha Ice Cream Cake)
1 box of your favorite Chocolate Cake Mix.
1 half gallon of your favorite Coffee Ice Cream
1 square of semi-sweet chocolate
1 container of Cool Whip
About 2 tablespoons of coffee
First bake the cake in two 8/9 inch baking pans according to
instructions.
Allow to cool on baking rack.
Take ice cream out of freezer and allow to soften.
Clean both baking pans and line with wax paper allow overhang for
easy removal.
Put softened ice cream into each pan and spread evenly. Each pan
should be about 1/2 full. Place back into freezer for about 2 hours -
until frozen again.
Using a long knife cut cakes in half.
Use one layer for the bottom.
Place a layer of ice cream on top.
A layer of cake, a layer of ice cream and a layer of cake.
The last layer is not used (can be if you want an extra tall cake).
Frost, and place back into freezer until 15 min before serving.
Frosting :
Combine Cool Whip with coffee. Spead over cake.
Shave chocolate and sprinkle on top.
Variations :
White cake with Strawberry Ice Cream and Fresh Strawberry garnish.
White cake with Straberry and Pistachio Ice Cream layers.
Combine any cake mix you like with any kind/kinds of ice cream.
I hope you enjoy this recipe. It is simple and is usually quite
a hit with large crowds. It beats Carvel any day !!!

Fudge Nut Sundae Pie
1� cups vanilla wafer crumbs
� cup chopped nuts
� cup Parkay margarine of butter, melted
1 cup Kraft Miniature Marshmallows
3 tbls half-and-half
� cup semi-sweet chocolate pieces
1 tbls powdered sugar
1 quart Breyers Chocolate Ice Cream, softened (10 minutes
in refrigerator)
Combine crumbs, nuts and margarine: press in bottom and sides of 9-inch
pie plate.
Melt marshmallows with half-and-half over low heat, stirring until
smooth. Add chocolate pieces and sugar: continue cooking until
chocolate is melted. Refrigerate 1 hour or until cool. Spoon ice
cream into crust: top with sauce. Garnish with whipped topping and
walnut halves, if desired. Freeze at least 1 hour. Place in
refrigerator 5 minutes before servings.
8 servings
Variations: Substitute Breyers Strawberry Ice Cream for Chocolate Ice
Cream.

| Here is a variation of .1 My aunt used to make it for all the kids
birthday parties. It is alot "cleaner" than scooped ice cream.
It's called Banana Split Cake and it tastes just like the real thing.
Start with crushed graham crackers mixed with a little sugar and
butter, as if you were making a pie crust. Press it into the bottom
of a square pan. Use the appropriate size depending upon the number
of eaters. Next place a layer of sliced bananas on the crust. Now
is where you can get inventive. The true recipe puts fudge sauce
on top of the bananas then softened Vanilla, Chocolate and Starwberry
ice cream on that. Then a layer of sliced strawberries of strawberry
topping. Then crushed nuts. Now place a layer of whipped cream on
top of it all and freeze thoroughly. Placing the whipped cream
on top gives you a surface to "decorate" with writing and cake
decorations.
This can be made days ahead but remember to let it sit in the
refrigerator for a few hours before serving or you will need a
jackhammer.
Get creative. Use different crusts, your favorie flavor ice cream,
different toppings, assorted fruits (stay away from pineapple, it
is very watery). Serve it as if it were cake, cutting it into squares.
I,ve done this in "adult" versions using Kahlua hot fudge sauce
on mocha ice cream or Chambord soaked raspberries (drained well)
with french cream ice cream. Do what every combination you like
but you cannot beat the good ol' Banana Split taste.

| Mississippi Mud (cake) is indeed very rich, but very delicious.
What you may be looking for, however, is Mud Pie, an ice cream
pie that seems to be very popular in restaurants in New England
(and elsewhere, I imagine). Here's a recipe:
1 chocolate cookie crust (make from crushed chocolate wafers
Oreos, etc., and melted butter; press into pie plate, or
use a purchased chocolate crumb crust)
2 pints top quality coffee ice cream (softened)
1 splash favorite spirit (e.g. dark rum, cognac, Kaluha,
etc.) [optional]
Fudge sauce
Whipped cream
1. Prepare crust. Place crust and a large-ish metal (or enameled
metal) bowl in freezer compartment.
2. Place softened ice cream in the chilled bowl, and stir with a
wooden spoon until smooth. Blend in desired spirits.
3. Using a rubber scraper quickly transfer ice cream to chilled
pie shell. Spread and swirl as desired.
4. Cover and freeze until firm.
5. Serve with warm fudge sauce and whipped cream.

| A friend of mine makes ice cream cakes for her kids' birthdays
in the jel-ring mold. First she crushes cookies and puts them
at the bottom. Then, takes a softened 1/2 gallon of ice cream
and spreads half in the mold. Then she puts in more crushed
cookies and chocolate syrup (or hot fudge). Then the rest of
the ice cream, more cookies, more fudge. Put the cover on, freeze
it (probably overnight), then run it under warm water when you're
ready to take it out and the viola!! instant ice cream cake!!!!
She usually tops it off with more fudge and whipped cream!!!

I just found this notes file 2 weeks ago and i think it's great!
I already have a whole binder full of 'COOKS' recipes and I intend
to try every one of them.
Back to the subject.
Does anyone have a recipe for a pistacio, icecream pie?
I remember it having whip cream and pieces of heath bars on top.
I think it had a graham cracker crust.
I had this back in High School and I remember wanting to lick the plate
off it was sooo good.

| I'm looking for a good source for ice cream cakes in Nashua or nearby.
This is for a friend's birthday party this weekend. She mentioned
Carvel - are they any good? Can I get good Italian spumoni anywhere?
(I have fond memories of New Jersey spumoni as a child - pistachio ice
cream, fudge, cherry ice cream, and more I can't remember. All very
high quality made by an Italian specialist. Sigh,,,)

| There is a Carvel here in Nashua - across from the CVS downtown. Also
try Dairy Queen ice cream cakes. I personally like DQ ice cream, but I
haven't had one of their cakes. I LOVE Carvel cakes. There is also
the variety from TCBY which is a yogurt cake (also very good).

on 101A, Amherst makes the best. My two favorits are theChocolate Mousse

| Thanks for the tips.
I'm going to make my own using the recipe (.1?) for banana split. I'm
hoping to find enough Tofutti to make this a non-dairy extravaganza.
It's no fun whipping up a cheesecake or other dairy treat, then not
being able to even taste it.

| I made the Banana Split cake described in 128.4.
It turned out well. Very sweet, but what else do you expect? Easy to
slice and serve. Easy to prepare. I assembled it in 35 minutes.
It takes a number of hours to freeze solid, so allow at least
overnight.
I used an oblong pan. The layers were not as distinct as I would have
liked, but I don't think one can easily remedy that. About the only
way would be to freeze each layer before adding the next. Because I
didn't have much time, I did the whole thing in one go. I used 3
flavors of ice cream (actually Tofutti) and ribboned them down the pan
the long way.
I used the following quantities for an 11 x 15 pan:
1 3/4 cups graham cracker crumbs, 1/3 cup margarine, some sugar
2 bananas
8 oz. fudge syrup
3 12 oz. containers of ice cream
1 frozen package sliced strawberries in syrup
1/4 cup chopped nuts
1 standard-size container store-brand Cool Whip
Have fun! No bake.
