| In New Mexico, we call those "TAPATIAS" and make them on crisp fried
tortillas. We also use canned [or fresh] bean dip, guacamole dip
[made with avocados], and Picante Sauce [buy in any grocery store].
This is a wonderful and easy supper.

| This is good any time of the year. I got the basic recipe from
my Aunt in Kansas several years ago. Below is my version (lots
of goodies added).
Taco Salad
1 lb. ground beef
1 med. onion, finely chopped
1 lb. cheddar cheese,grated
1 can kidney beans
1 envelope taco mix
1 head lettuce
2-3 tomatoes, sliced
1 bag corn Doritos,crushed (8 oz.)
1 bottle dressing (Catalina or French)
Brown ground beef, remove from heat and drain off the fat. Add
taco mix, kidney beans, and sald dressing. Mix well.
In LARGE bowl, toss lettuce, tomatoes, shredded cheese, onions and
Doritos. Add beef mixture and mix well. Serve with taco sauce,
sour cream and blck olives if desired. Be sure to use a very large
bowl, this has a lot of volume to it.
When you make this to bring some place, keep the meat mixture, Doritos
and lettuce mixture separate from each other. Mix before serving.
Otherwise, the meat will make the lettuce soggy and if you add the
Doritos to the lettuce, the lettuce makes the Doritos soggy. I
also serve the onions on the side so those of us who don't like
onions do have to pick them out.

| TACO SALAD
1 lg bag taco chips (plain)
1 1/2 lbs hamburger
1 1/2 pkgs taco seasoning mix
2 cups grated cheddar cheese (or more)
1 head lettuce (shredded)
6-7 tomatoes (cut very small)
taco sauce
sour cream
In advance, cook hamburger and taco seasoning mix according
to directions on mix package.
On a very large platter, place taco chips and distribute evenly.
Add hamburger mixture and then spread with about 1/2 of the cheese.
(you may put this in the oven for a few minutes if you like or "zap"
it but it is fine the way it is also). Distribute lettuce eveny
and top with tomatoes and rest of cheese. Serve taco sauce and
sour cream on side.
I made this for a work party not too long ago and it went over really
big. I had the meat mixture made up and just heated in the microwave
before serving and with the rest of the ingredients all grated and
chopped up, I just assembled the salad last minute.

| Don't have a recipe, but here's what I'd do. Put lettuce, cheese,
diced tomato, scallions and maybe a few other salad extras in a bowl.
Brown some ground beef, but leave this off the salad until you get to
the party and re-heat it. When you add the ground beef, put some
tortilla chips around the edge of the bowl.
Put sour cream and a mild salsa type sauce (the consistincy of
thick gazapacho) on the side.
Gee, I may have to make this sometime soon!

| I've tried this recipe and its pretty good.
Brown some ground beef, and drain the excess liquid, mix in half a package of
taco seasoning, a small jar of salsa (mild, medium or whatever), and one can of
refried beans with the ground beef and heat until hot. Arrange tortilla chips
on a plate and spoon on ground beef mixture (you may want to wait till you get
there to do this so the tortilla chips won't get soggy). Then top with your
favorite taco toppings - cheese, onions, tomatoes, lettuce, sour cream.
One suggestion might be to keep all the ingredients separate and let everyone
create their own.

| I just looked at my recipe last night since I'm bringing it for our
Cinco de Mayo potluck tomorrow. It's very similar to previous note
with a few variations.
1 head of lettuce
4 - 6 medium tomatoes (I use 4)
1 small bunch of scallions
2 cans ranch or chili style beans (no kidney beans) rinsed and drained
shredded cheddar cheese
1 lb hamburger browned with package of taco seasoning
Have all but hamburger mixed in large bowl until you're ready to serve
and then mix it in along with:
1 bottle of Catalina dressing (a small one is fine)
1 bag of round tortia chips crushed reserving some in larger pieces to
place on top of salad when done mixing (recipe calls for Fritos but I
don't like the salt on them in the salad so you can decide)
If you want alter some of the salad ingredients to fit what you like.
If you're not sure it will all be eaten you may only want to mix part
of it at one time because eating it later with soggie chips to okay but
not nearly as tasty!
