| This is kind of a late answer and I have no excuse except laziness.
I freeze food all the time. When I'm cooking, it's common for
my husband to ask, "Is this for me or the freezer?".
As for quick entertaining foods, you can freeze a lasagne in a
store bought foil pan and then put directly into the oven on
350 for as long as it takes to heat through. About 45 min to and
hour. Cover it with foil until the last 15 min.
VOILA!! instant entertainment dinner.
If it's only coffee etc....
Make any kind of philo dough stuff. Fill with sweet apples,
combo of spinach and cheese, etc...
Spread philo on a baking sheet. Brush with butter and spread
more philo out on top. Spread you filling over this. (It
turns into a type of quick strudel if you peel and slice
fruit and mix with cinnamon and sugar - I like apples
or peaches) Cover with more philo brushing with melted
butter between layers. Use about 4-6 layes on each side.
Score he top into whatever size pieces look hood to you
and bake in a 350 oven until brown. Cool and cut through or
just freeze as is. Reheat when ready to serve.
Most cakes freeze well too. You pull them from the
frezer and let them defrost and then decorate or serve
with ice cream and hot fudge or fruit and whipped cream.
