CHICKEN, RIBS, AND SAUSAGE
INGREDIENTS:
1 1/2 whole fryer chicken (3lb.)
1 - 2 lb. baby ribs
1 - 1 1/2 lb. italian sausage (hot, sweet, or mixed)
2 cloves finely chopped garlic
1/2 tsp. basil finely ground
1/2 tsp. rosemary finely ground
5 oz. sautern wine
5 oz. marsala wine
salt and pepper to taste
Chop into pieces: chicken, ribs and sausage (2 in.).
Place into shallow pan with all ingredients except wine.
Bake at 375 for 45 min. turning pieces 2 or 3 times. Add
wine and bake for another 20 min. Remove from oven and allow
to stand 5 min. Remove pieces from pan and place in large
caserole to serve. Discard wine/juices.
