Basically, the first-born of EVERYTHING is considered "holy" to a
certain degree, and doesn't belong to it's "owner" but to Hashem.
This is traced back to the tenth plague brought upon the Egyptians,
in which The Angel/Hashem "Passed Over" the Jewish homes. (And that's why it's called passover)

There are a few "Mitzvot" associated with it, of which the most relevant one is:

Pidyon Haben: A ritual of redeeming your first-born son,
it takes place at the 30'th day after the birth and the father "redeems" his
son from a "Cohen".
