Fred & Andrew,
The best thing to do is to try and save as much life energy as possible to
meet the last guy in the first scenario. But if you want more than just a
common sense help, then it follows below:
As soon as you defeat the last common fighter and the big guy enters the room,
select the nunchuks as weapon and get close enough to the big guy but not in
front of him. In other words, don't get so far away that he does one of his
jumps to clear the distance and get near you. Once you're within the nunchuks'
swinging range, wait for him to travel vertically regardless of up or down to
get to you. as soon as he is near enough, swing the nunchuks. You get 5 swings
with the nunchuks, and if you can get all five in, he usually dies. If not,
use the jumping tornado kick but use the same logic as if using the nunchuks.

Above is an example. When the Big guy, B moves down the screen to get in front
of you Y, nail him, then purposely move back up the screen before he gets up
and do it again.

Stuck again? Alright. I'll throw in my two pennies again. Spoiler follows:
You have to get the concept of dodging those nasty sherikens.
When the ninjas do one of those flying back flips to get away from you and land
far away from you, it's a sure bet they'll throw sherikens to you. As soon as
you see them land, move your character vertically on the screen to get away
from the flying sheriken's path. Sometimes they throw the sherikens more than
once, so get ready to dodge another if they do not immediately close the
distance after launching their sheriken. Those sherikens do a lot of damage!
Once you have successfully dodged the sherikens, watch the ninjas as they run
up to you to close the gap. When you see them starting to run towards you,
once again use the old familiar manuver of moving your character vertically
either up or down and watch what happens. After their quick run to close the
gap, they will follow and "walk" towards your character.
Now, you need to practice your timing on this, but the general idea is to wait
until they are just near your character and do your tornado kick or just front
kick. (In other words use the same technique you used on the big guy from
the end of the level 1)
Repeat this until you have conquered all of the ninjas. Also, save the
nunchakus until the end! Don't waste on the flimsy little ninjas.
