"Overconsumption of certain dietary components is now a major
concern for Americans," the report said, noting that "diseases of
dietary excess and imbalance" are among the leading caused of death
in the United States.
Many Americans are overweight, don't eat enough fruit, vegetables,
and whole grains, and often fail to get required nutrients such
as calcium and iron.
Among the major findings ...
o Most people should reduce the consumption of fat, especially
saturated fats, such as from eggs, butter, or untrimmed red
meat. It suggests more vegetables and fruits, fish, poultry,
lean meats, and low-fat dairy products.
o More whole grain foods, cereal products, vegetables, and fruits
should be in the diet. The report recommends that dried beans
and peas be used as a source of protein.
o Sodium consumption should be reduced by limiting the use of salt.
o Alcohol intake should be limited to 2 drinks/day "if at all."
Pregnant women should avoid any alcohol.
o Flouride should be added to community water systems to prevent
tooth decay.
o Adolescent girls and women should increase consumption of foods
high in calcium, such as low-fat dairy products.
o Children, adolescents, and women of childbearing age should consume
more iron-rich foods, such as red meat, fish, cereals, beans,
and whole-grain cereals.
