They don't all have to be sandwiches, either! I'm allergic to wheat, so I can't have pita bread or the lite breads; a 1-slice sandwich doesn't thrill me. Most of my lunches consist of 2 oz tuna with 2 tsp lite mayo (fits nicely in a Tupperware snak cup) with rye krisp (you could use melba rounds) and/or celery sticks. One egg with mayo is good too. Sometimes I like a hot lunch, so when I make broiled chicken I make enough for leftovers. Then it goes into a Microwavable dish with some broccoli. You'll feel like you've had a meal instead of a snack! Beverly |
